Food That Feels Like Home: Cincinnati Chili Comfort
I’m just a Kentucky girl living in a Virginia world with a dash of Cincinnati in my blood. My dad was raised in Cincinnati until he was 9. He told me stories about growing up in the city and he said he could hear the fans from the Reds’ stadium cheering from his yard. Growing up we went to Kings Island, Reds’ games, and the zoo. So, I was no stranger to Skyline Chili and Gold Star Chili. I didn’t get to eat it a lot but it was always a food that felt like home.
When I found this recipe on Pinterest at getcrocked.com you can only imagine how ecstatic I was to find an awesome recipe of one of my favorite comfort foods. This is one of my favorite meals to cook during the fall and winter months. This recipe makes 6 servings and I serve it with spaghetti noodles (YUM!), garnish with cheddar cheese, oyster crackers, and the optional chopped onions. I don’t like chopped onions but I know some people do.
They actually have names for the way you fix your chili. A 3-Way is spaghetti covered chili, topped with shredded cheddar cheese. A 4-Way is a 3-Way with onions or beans. A 5-Way is a 3-Way with onions and beans. If you want, you can even put the chili on your hot dogs. Make this recipe down to the T, you won’t be disappointed.
Crockpot Cincinnati Chili
1 1/2lb beef
2 onions, medium chopped
1/2 cup, celery chopped
6 garlic cloves, minced
2 Tablespoon chili powder
1 Tablespoon paprika
1 1/2 tsp dried basil
1 1/2 tsp dried oregano
1 tsp dried thyme
1 tsp ground cinnamon
1/2 tsp cayenne pepper
1/2 tsp cumin
1/2 tsp red pepper flakes crushed
1/2 tsp salt and pepper
1/4 tsp ground all spice
29 oz tomatoes diced
8 oz tomato sauce
1/2 cup of water
Brown ground beef with onions, celery, and drain
All ingredients into slow cooker and stir
Cook: on low for 6 hours or 3 1/2 – 4 1/2 on high, on high stir the last 1 1/2 hour
Cook spaghetti 1/2 hour before chili is done
Serve with oyster crackers, chopped onions (opt.), and shredded cheddar cheese.
